Marry Me Chicken Pasta
A creamy, flavorful pasta dish that's rich, comforting, and perfect for a romantic dinner for two.
Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tbsp olive oil
For the Sauce:
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt and pepper to taste
For the Pasta:
- 8 oz penne or fettuccine
- Fresh basil, chopped (for garnish)
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook pasta according to package directions.
- Reserve ½ cup pasta water, then drain and set aside.
2. Prepare the Chicken
- Season chicken with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken for 5–7 minutes per side until golden brown and cooked through.
- Remove from skillet and let rest before slicing.
3. Make the Sauce
- In the same skillet, melt butter.
- Add garlic and cook for about 30 seconds until fragrant.
- Pour in chicken broth and heavy cream.
- Stir in Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
- Simmer for 3–5 minutes until slightly thickened.
4. Combine
- Add cooked pasta to the sauce and toss to coat.
- If needed, add a splash of reserved pasta water to loosen the sauce.
- Slice chicken and place on top of the pasta.
5. Serve
- Garnish with fresh basil and extra Parmesan cheese.
- Serve immediately with garlic bread and a glass of wine.
