Marry Me Chicken Pasta

A creamy, flavorful pasta dish that's rich, comforting, and perfect for a romantic dinner for two.

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil

For the Sauce:

  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste

For the Pasta:

  • 8 oz penne or fettuccine
  • Fresh basil, chopped (for garnish)

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package directions.
  • Reserve ½ cup pasta water, then drain and set aside.

2. Prepare the Chicken

  • Season chicken with salt, pepper, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat.
  • Cook chicken for 5–7 minutes per side until golden brown and cooked through.
  • Remove from skillet and let rest before slicing.

3. Make the Sauce

  • In the same skillet, melt butter.
  • Add garlic and cook for about 30 seconds until fragrant.
  • Pour in chicken broth and heavy cream.
  • Stir in Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes.
  • Simmer for 3–5 minutes until slightly thickened.

4. Combine

  • Add cooked pasta to the sauce and toss to coat.
  • If needed, add a splash of reserved pasta water to loosen the sauce.
  • Slice chicken and place on top of the pasta.

5. Serve

  • Garnish with fresh basil and extra Parmesan cheese.
  • Serve immediately with garlic bread and a glass of wine.
