Ingredients
- 3 cups seedless watermelon, cubed
- 10–12 fresh mint leaves, plus extra for garnish
- 2 limes, cut into wedges
- 2 tbsp simple syrup (or honey, to taste)
- 4 oz white rum (about 2 oz per drink)
- 1 cup club soda or sparkling water
- Ice cubes
Garnish
- Watermelon wedges
- Lime slices
- Fresh mint sprigs
Instructions
Step 1: Make the Watermelon Juice
Blend the watermelon until smooth.
For a smoother drink, strain the juice through a fine-mesh strainer into a pitcher to remove any pulp.
Step 2: Muddle
Divide the mint leaves, lime wedges, and simple syrup between two glasses.
Using a muddler or the back of a wooden spoon, gently press everything together to release the mint oils and lime juice. Avoid over-muddling the mint, as it can become bitter.
Step 3: Add the Good Stuff
Fill each glass with ice.
Pour 2 ounces of white rum into each glass.
Add about ¾ cup of fresh watermelon juice to each glass.
Top with club soda or sparkling water.
Step 4: Stir & Garnish
Gently stir to combine.
Garnish with:
