Bacon-Wrapped Filet Mignon

Ingredients
🔹 2 filet mignon steaks (6–8 oz. each)
🔹 2 slices thick-cut bacon
🔹 2 tablespoons olive oil
🔹 2 tablespoons butter
🔹 2 cloves garlic, smashed
🔹 2 sprigs fresh rosemary
🔹 2 sprigs fresh thyme
🔹 Salt, to taste
🔹 Freshly cracked black pepper, to taste
🔹 Kitchen twine or toothpicks
Instructions
Step 1: Prepare the Steaks
Remove the filet mignon from the refrigerator about 30 minutes before cooking to allow them to come to room temperature.
Pat each steak dry with paper towels and season generously on all sides with salt and freshly cracked black pepper.
Step 2: Wrap with Bacon
Wrap one slice of bacon around the outside edge of each filet.
Secure the bacon with kitchen twine or toothpicks to keep it in place while cooking.
Step 3: Sear the Steaks
Heat the olive oil in a cast-iron skillet over medium-high heat until shimmering.
Place the steaks into the hot skillet and sear for 2–3 minutes per side until a rich golden-brown crust develops.
Sear the bacon around the edges until it begins to crisp.
Step 4: Add Butter & Herbs
Reduce the heat slightly.
Add the butter, garlic, rosemary, and thyme to the skillet.
As the butter melts, continuously spoon the melted butter over the steaks for 2–3 minutes. This adds incredible flavor while helping the steaks cook evenly.
Step 5: Finish in the Oven
Transfer the skillet to a preheated 400°F oven.
Cook until the steaks reach your preferred doneness.
🔹 Rare: 120–125°F
🔹 Medium Rare: 130–135°F
🔹 Medium: 140–145°F
🔹 Medium Well: 150–155°F
Use a meat thermometer for the most accurate results.
Step 6: Rest
Remove the steaks from the oven and transfer them to a serving plate.
Loosely cover with foil and allow them to rest for 5–10 minutes before serving.
Resting allows the juices to redistribute throughout the meat, resulting in a tender, juicy steak.
